The eating episode

What to expect

No cooking this one - just eating. Three silogs land on the table: tocino with garlic rice and egg, tapa with garlic rice and egg, longganisa with garlic rice and egg. Between bites Liem tries to explain the show, and Fhred lays out the simple manifesto: food is not just sustenance, it is the space where the real conversation actually happens.

Liem mangling the pronunciation of "sinangag" five times in a row while Fhred slowly loses it. The ube latte that demands a second ube latte. The owner of Ceres walking in with longsilog at exactly the right moment.

Silog, three ways

Eating episode - no cooking required

This one is for the eaters. Tocilog, tapsilog, longsilog - the holy trinity of Filipino breakfast. Fried rice, fried egg, and one of three cured meats. Order in, dip in vinegar, talk over breakfast.

What goes with what

  • Tocilog - sweet cured pork (tocino), garlic fried rice, fried egg
  • Tapsilog - cured beef (tapa), garlic fried rice, fried egg
  • Longsilog - Filipino sausage (longganisa), garlic fried rice, fried egg

The dip

  • Banana ketchup
  • White vinegar
  • Soy sauce and calamansi
  • All of the above, mixed

Chef's notes

  • The sauce is the seasoning. Do not skip it.
