The recipe

Ube champorado

Sweet potato creates the creamy body of this reimagined champorado, while ube, coconut and caramel turn it into a rich, glossy dessert balanced by fresh berries.

Ingredients

Ube champorado

  • 300 g arborio rice
  • 500 g sweet potato, peeled and diced
  • 1.5 L water
  • 400 ml coconut milk
  • 20 ml ube extract
  • 150 g caramel sauce
  • 5 g salt

Garnish

  • 60 g desiccated coconut, lightly toasted
  • 60 g raspberries
  • 60 g blackberries
  • 120 g strawberries, halved

Cook the sweet potato

  1. Place the sweet potato and water into a large saucepan.
  2. Bring to a simmer over medium heat.
  3. Cook for 15–20 minutes, until the sweet potato is very soft.

Build the champorado

  1. Using a potato masher or stick blender, mash the sweet potato into the cooking liquid until mostly smooth.
  2. Add the arborio rice.
  3. Cook over medium-low heat, stirring regularly to prevent sticking.
  4. Continue cooking for approximately 25–30 minutes, until the rice is tender and creamy.

Finish

  1. Stir in the coconut milk.
  2. Add the ube extract.
  3. Add the caramel sauce.
  4. Add the salt.
  5. Continue cooking for another 5 minutes, until smooth and glossy.
  6. The consistency should be thick, creamy and similar to a loose risotto.

Plating

  1. Spoon the warm ube champorado into a serving bowl.
  2. Scatter toasted desiccated coconut over the top.
  3. Arrange the raspberries, blackberries and strawberries around the bowl.
  4. Serve immediately while warm.
